How come with old cars you could pour water on a overheating engine. But you can no longer do that with modern cars?

OK, old cars were Cast Iron, VERY hard and can withstand great heat temp differences. Modern cars are often aluminum based, which warps really fast with temp changes. You can actually put a modern aluminum head in an oven at your house and then bend it after heating it up at such relatively low temperatures.
